Greek almond biscuits

I made these biscuits to bring them to the barbecue we had at Angel's place. They are very easy and quick to make and really tasty! Recommended for beginners in the kitchen!




Before we start:
  • Difficulty: easy
  • Preparation time: 30 min
  • Cooking time: 30 min (15 min per tray) + cooling time
  • Cost: cheap
  • Origin: Greece
  • Recipe obtained from: Home baked

Ingredients (makes 25):

375g almond meal
220g sugar
3 drops almond essence (optional but recommended)
3 egg whites, beaten lightly
80g flaked almonds


Preparation:
  • In large bowl, combine almond meal, sugar and almond essence. Add egg white and stir until mixture forms a firm paste.
  • Shape a tablespoon of mixture to obtain an elongated or half-moon form. Roll into the flaked almonds, pressing well to make almonds stick to the biscuit. Place on baking-paper-lined oven trays (I used two trays).
  • Bake in a preheated oven at 180-190ºC about 15 minutes or until lightly brown.
  • Cool on trays.

Comments:

My recommendation is to break these biscuits into pieces and mix them with vanilla ice-cream. Delicious!!!

Store biscuits in airtight container for up to one week or freeze for up to three months.
